Cornell speeds up wine safety testing

A Cornell-built tech is slashing wine grape testing times from 40 minutes to just 4, transforming operations at E&J Gallo Winery, according to the Cornell Chronicle.


The new system, SPMESH-DART, developed by professor Gavin Sacks and his team after a decade-long partnership with Gallo, screens 24 samples at once — a huge leap for a process that once created bottlenecks during harvest.

Beyond streamlining flavor and toxin detection, the tech could soon expand to other industries. Gallo plans to commercialize it, and Sacks says it’s a win for students too — offering real-world research, job pipelines, and direct industry impact.
