While some dread the long and frigid winter, ice wine makers delight in perfect winemaking conditions when the temperature drops.
Dave Breeden, a winemaker at Sheldrake Point Winery in Ovid, says ice wine grapes need to be harvested when the temperature is between 12 and 15 degrees, according to Post Standard – Upstate.
