Skaneateles’ Hidden Fish owner Adam Weitsman announced new leadership at the popular sushi restaurant in a social media post this week. The post revealed that Chef Masayori “Masa” Adachi will take over the position of executive.

Born in Fukuoka City and raised & trained in Tokyo Japan, Chef Masayori “Masa” Adachi began his culinary journey with a deep respect for traditional Japanese technique. He refined his craft over 6 years at a respected restaurant in Tokyo, where he also earned his prestigious Fugu (blowfish) License.
Chef Masa later moved to the United States, beginning in Palo Alto before settling in Chicago. Over more than a decade at the Park Hyatt Chicago, he became known for his precision and artistry, eventually serving as Head Sushi Chef at Japonais by Morimoto, where he worked closely with world-renowned Chef Masaharu Morimoto. He continued advancing his leadership as Executive Sushi Chef at The Deer Path Inn in Lake Forest, IL, while also operating his own consulting practice in the Greater Chicago area.
After an accomplished career in major culinary markets, Chef Masa brings his expertise to the Finger Lakes.
