Rochester company launches new cocktail ingredient aimed at growing savory drink trend

A Rochester-based company known for its cocktail bitters and mixers has launched what it says is a first-of-its-kind product designed to make savory cocktails easier for bars and restaurants to prepare.

Fee Brothers announced Monday the release of a new line of water-soluble Fat Wash products, which are intended to replicate the flavors and mouthfeel created through traditional fat-washing techniques without the time-consuming preparation process typically required.

The new line includes bacon, roasted duck and browned butter flavors. Traditional fat washing involves infusing spirits with fats to create richer flavors and textures, a process that can take hours or days and often requires refrigeration, straining and additional labor. Fee Brothers says its new product allows bartenders to achieve similar results with a few dashes added directly to a cocktail.

Company President and CEO Jon Spacher said the idea grew out of experimenting with savory cocktails at home and finding a way to deliver the same flavor characteristics in a water-soluble format. The company says the product is designed to eliminate oiliness and separation while creating a richer mouthfeel in drinks.

Fee Brothers developed the product as savory cocktails continue gaining popularity in bars and restaurants. The company says the standardized formula can help reduce waste, improve consistency and eliminate the need to dedicate freezer space or staff time to preparing infused spirits.

Founded in 1864, Fee Brothers is a fifth-generation family-owned company based in Rochester that produces bitters, syrups, mixers and other beverage ingredients. The new Fat Wash line debuted in the United States on June 1, with international distribution planned later this year.
