Seafood summit set for Oswego

Freshwater fish, food safety and aquaculture will take center stage at a regional seafood summit next month in Oswego.

The 2026 Upstate New York Seafood Summit will take place April 9 from 1 to 4 p.m. at the Oswego Public Library on East Second Street.


The free event brings together fishermen, aquaculture producers, retailers, chefs and researchers to discuss issues affecting the seafood industry.

Organizers say this year’s summit will focus on freshwater fish and include updates on food safety, research and industry trends.

Presentations are expected from the New York State Department of Environmental Conservation, the New York State Department of Health and New York Sea Grant aquaculture specialist Barry Udelson.

SUNY Oswego assistant professor Ellen Karboski will also discuss the first year of a collaboration between the university and a local fish processor. The project gives students hands-on experience using fisheries research techniques with Great Lakes species.

Chef Jeff Deloff of the Syracuse restaurant Touche’ will offer a culinary industry perspective during a “Culinary Connection” segment of the program.

Cornell Cooperative Extension of Ontario County Executive Director Moira Tidball will demonstrate how to prepare yellow perch shrimp cocktail. She will also discuss wild fish preparation techniques, recipes and nutrition information tied to the WildHarvestTable resource she helped create.

The summit is part of a statewide series designed to encourage collaboration and networking across New York’s seafood industry.
