Top regional farmers, chefs, and winemakers to prepare a phenomenal Finger Lakes dining extravaganza at Geneva on the Lake.

The non-profit Finger Lakes Culinary Bounty (FLCB) is pleased to announce the mouthwatering menu for their annual fundraising dinner, held on the stunning, lakefront grounds of Geneva on the Lake. On Monday, August 5, top regional chefs will create a feast featuring ingredients from Finger Lakes farmers and complemented by local beverages.

Heirloom tomatoes, a cheese extravaganza, pickled garlic scapes, cheddar bisque, slow roasted duck, beef tenderloin, stone fruit napoleon, and strawberry cheesecake ice cream are just a few of the items to be served at the dinner. Even the salt on the tables will be local.

Local beverages will complement the hors d'oeuvres, as well as the soup, salad, entrée, and dessert courses. Wines, cocktails, and beer will be offered by the Cayuga Lake Wine Trail, Finger Lakes Distilling, Miles Winery's Brewery, Americana Vineyards, Ravines Wine Cellars, and Glenora Wine Cellars, Red Newt Winery, Hector Wine Company, Bellwether, and Dr. Konstantin Frank.

The dinner kicks off at 6:00 pm with hors d'oeuvres on the Terrace. During this hour, guests will have the opportunity to enjoy Finger Lakes fare - and chat directly with the farmers, chefs, and winemakers who produced it.

At 7:00pm the event moves into the tent for dinner. The main event consists of three fabulous courses paired with Finger Lakes wines followed by desserts, all highlighting local ingredients. For each delicious morsel served, a trio of chefs, winemakers, and farmers will share behind-the-scenes details on creating the evening's culinary experience. (See the complete menu below.)

A silent auction will showcase the best of the region, including gift baskets and gift certificates for local restaurants, spas, theater, and more. Winners will be announced throughout the evening. The live and silent auctions benefit FLCB, the only Finger Lakes-wide non-profit dedicated to local food and beverages.

For guests wanting to spend the night, overnight packages are also available, starting at $413 and include one night accommodation, 2 tickets to the Dinner, a complementary bottle of wine on arrival, and a full breakfast (tax and gratuity not included).

*Sweet Penelope Farm salad composed of slices of heirloom tomatoes and cucumbers with kimchee, by Chef Carl Bray of Geneva on the Lake, paired with a Ravines Wine Cellars wine

*Gottsland Farm duck, roasted and slow cooked with cherry compote and pickled garlic scapes, by Chef Orlando Rodriguez of Veraisons Restaurant, paired with a Glenora Wine Cellars wine


Under the Tent:


*Artisan bread by Wide Awake Bakery with the sparkling Chateau Frank Blanc de Noirs by Dr. Konstantin Frank

*Sunset View Creamery cheddar bisque by Chef Tony Banks of Stonecat Cafe, paired with Sauvignon blanc from Hector Wine Company

*Mixed green salad with smoked cherry tomatoes, roasted corn, pickled green beans, hard cooked egg, blue cheese, and herb vinaigrette, by Chef Lindsey Freeman of Crystal Lake Cafe, paired with an Americana Vineyards Pinot Gris

*"Herbaceous" beef tenderloin with pea shoot pesto, by Chef Brud Holland, paired with Red Newt Merlot (vegetarian option: Herbed polenta with pea shoot pesto**)

*Accompanied by Seneca Salt Company Natural Salt and Grapevine Smoked Salt


Dessert:

*Black Diamond Farm Stone Fruit Napoleon, by Leslie Muhlhan of Just Desserts, paired with the never-before released Bellwether 2012 Reisling

*Cayuga Lake Creamery Strawberry Cheesecake Ice Cream, with Vanillen Dairy cheese and Seneca Breeze strawberries

*Seneca Breeze Berries with chocolate bites from Preliminaires Chocolat
